While a decent bottle of champagne can cost you upwards of $50, Recently, I found myself searching for a less expensive bottle of sparkles to enjoy. In doing so I found the Extremarium de Mont Marçal.

Sometimes, I like to indulge myself in a little personification of a bottles I encounter so I'd like you all to meet Marielle. Her light golden, honeyed hair sparkles like sunshine with the perfect amount of mousse. Just as the tiny bubbles pop, she introduces herself to your nose with a dough-eyed look and a glimmer of feistiness. Bright, candied citrus plays on her tongue. It's her understated confidence that makes her so astounding. She's straight-forward but she doesn't shout her opinions. She's got a bit of an eclectic pallet so if you're trying to pair her with dinner try these:
- Aperitifs with good acidity like yellow roasted tomatoes and a triple cream goat cheese.
- Tangy chicken and BBQ pizza with banana peppers
- Chili con carne
- Don't hesitate to drink her in solo with a good book (because Marielle is just that kind of gal).
The Extremarium is an extraordinary value. This Cava has a striking underlying structure and balance. The fruit -apples, pears and citrus- and the acidity perfectly align.
About the Producer
Mont Marcel was founded by Manuel Sancho in 1975 when he retired from the music industry. Located in the heart of Penedes about 35 miles from Barcelona, Manuel decided to direct his activity to a new art: Cava and still wines. They focus on producing only high-quality, high-value wines.
